2 cups cheddar cheese, shredded (shred a little extra cheese for the top)
Preheat the oven to 425F.
In a large bowl, mix together flour, baking soda and salt. Stir in shredded cheese so it is coated with the flour mixture.
Make a well in the centre of the flour mixture, add the buttermilk and mix until a sticky dough forms.
Lightly flour a work surface and tip the dough onto it.
Gently roll and fold the dough a couple of times to bring the mixture together. Do not knead.
Shape the dough into a ball and place on onto baking sheet lined with parchment paper or silicone tray. Cut the dough with a deep X, cutting all the way through dividing it into quarters. Dust the bread with flour, add extra cheese to the top if desired.
Bake for 20-30 minutes.
The loaf should be golden-brown, if you tap the bottom it will sound slightly hollow.
