Chocolate Chip Banana Bread Muffins

Yield: 24 muffins


  • 1 ¾ cup all-purpose flour
  • ½ cup rolled oats
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tap ground cinnamon
  • ½ tsp salt
  • 2 eggs
  • ½ cup packed brown sugar
  • 3-4 mashed ripe bananas
  • ¾ cup buttermilk
  • 2 tbsp vegetable oil
  • 2 tsp vanilla
  • 1/3 cup mini chocolate chips


  1. Preheat oven to 350F. Spray muffin pan and set aside.
  2. In a large bowl, combine flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Mix well and set aside.
  3. In a medium bowl, beat together eggs and brown sugar for 2 minutes. Add bananas, buttermilk, oil, and vanilla. Mix again until well blended.
  4. Stir wet ingredients to dry ingredients and mix until dry ingredients are moistened. Then stir in chocolate chips.
  5. Spoon batter into muffin pan, fill to ¾. Bake for 20 to 25 minutes.
  6. Cool on wire rack and ENJOY!
