Chocolate Chip Banana Bread Muffins

Ingredients
- 1 ¾ cup all-purpose flour
- ½ cup rolled oats
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tap ground cinnamon
- ½ tsp salt
- 2 eggs
- ½ cup packed brown sugar
- 3-4 mashed ripe bananas
- ¾ cup buttermilk
- 2 tbsp vegetable oil
- 2 tsp vanilla
- 1/3 cup mini chocolate chips
Instructions
- Preheat oven to 350F. Spray muffin pan and set aside.
- In a large bowl, combine flour, rolled oats, baking powder, baking soda, cinnamon, and salt. Mix well and set aside.
- In a medium bowl, beat together eggs and brown sugar for 2 minutes. Add bananas, buttermilk, oil, and vanilla. Mix again until well blended.
- Stir wet ingredients to dry ingredients and mix until dry ingredients are moistened. Then stir in chocolate chips.
- Spoon batter into muffin pan, fill to ¾. Bake for 20 to 25 minutes.
- Cool on wire rack and ENJOY!
