Bacon Blue Cheese Brussel Sprouts

  • 1 lbs. Brussel sprouts (organic if you can get them)
  • 1 package of bacon (If you can get something from a butcher that’s thick cut that works best)
  • 4 oz. gorgonzola cheese crumbles (or other mild blue cheese)
  • 2 medium cloves of garlic
  • 1 Shallot (optional but I like the flavor it adds)

Prep

  1. Cut the stems off the sprouts and peel off the outer layers, when peeled cut in half
  2. Mince the garlic
  3. Dice the shallot as small as you can get it
  4. Chop the bacon into 1/2” bits

Cook

  1. In a saute pan, cook the bacon until it’s almost done (not crispy) I use a medium low heat to time the cooking of the bacon with the cooking of the sprouts
  2. While the bacon is cooking, In a large pot boil the sprouts / garlic / shallots until tender (5 to 10 minutes depending on the amount of sprouts)
  3. Once the sprouts are cooked, douse them in cold water to stop them from cooking, drain them well and completely
  4. Put the sprouts into the pan with the bacon and stir until heated up and flavored with the bacon grease
  5. Remove from heat and stir in the gorgonzola
  6. Move the whole mixture to a serving dish
